This season, we can discover terracotta jars mainly from the region of Tangier in Morocco. They are made in a traditional way, according to ancestral techniques, based on clay. Over the generations, potters pass on their know-how, such as the mastery of cooking over a wood fire, resulting in a flamed finish. Several successive cooks may be necessary to effect the chemical transformation of the clay and the pot can be more easily manipulated, then to bring the tesson to maturity.
